1 tot measure salt flakes
½ tot measure black peppercorns
½ tot measure paprika
½ tot measure crushed garlic powder
½ tot measure coriander seeds
1 tsp cayenne pepper or chilli flakes
1 tsp cumin
1 tsp cloves
1 tsp whole nutmeg
1 tsp allspice (Pimento)


  • Grind all spices individually in TM bowl for approximately 1 min/speed 9. Wait a few seconds before opening the lid to let the ground spice settle in the bottom of the TM bowl. Savour the amazing smell of freshly ground spices…. No fillers and definitely no additives!!
  • Decant each spice into zip sealed bags or glass bottles.
  • This recipe is highly adaptable. Different herbs and spices can be added or removed depending on what type of meat you are flavouring.

Cooks’s notes

  • When I make this mixture for Christmas gifts I usually multiply the above measures by at least 4 to make up a decent amount which I then decant into small glass bottles.
