Ingredients
Sausage
800g beef, cubed
1 onion, quartered
2 cloves garlic
2 tbsp fresh oregano leaves or 1 tsp dried
1 tbsp fresh thyme or 1 tsp dried
2 tbsp fresh mint or 1 tsp dried
1 tsp ground cumin
70g breadcrumbs
1 egg
2 tbsp olive oil
2 tsp sea salt to taste
1 tsp black pepper to taste

Tomato sauce
1 onion, quartered
2 cloves garlic
2 tbsp fresh oregano leaves
2 tbsp olive oil
120g red wine
2 x 410 g tin chopped tomatoes
80g tomato paste
3 tsp TM stock concentrate or to taste
1 tsp sugar
Sea salt to taste
Black pepper to taste
Few sprigs thyme and oregano to garnish

Method

Sausage

  • Place half of the beef into mixing bowl and mince for 4 times/ 1 sec/ closed lid / Turbo. Set aside. Repeat with remaining beef and set aside with first batch.
  • Place onion, garlic, oregano, thyme, mint and cumin into mixing bowl and chop for 2-3 sec/ speed 7. Scrape down sides of bowl.
  • Add all remaining sausage ingredients including reserved mince and mix for 2-3 sec/closed lid/ Turbo.
  • Roll 2 tablespoons of mixture into a small sausage shape repeating with remaining mixture. Place sausages onto Varoma tray and set aside until required.

Tomato sauce

  • Place onion, garlic and oregano into mixing bowl and chop for 2-3 sec/ speed 7. Scrape sides of bowl.
  • Add oil and sauté for 2 min/ Varoma/reverse/speed 1.
  • Add wine and cook for 2 min/Varoma/reverse/speed 1.
  • Add all remaining sauce ingredients except garnish.  Set Varoma into position and cook for 20-25 min/Varoma/reverse/speed 1.
  • Place sauce and sausages into ThermoServer, top with sprigs and thyme and oregano and let stand for 5-10 minutes before serving.

Cook’s notes

  • You can serve the recipe with pasta or mashed potatoes.
  • The beef can be replaced with lamb or even half, half.
  • You can even cook your pasta or potatoes in the basket while you cook the rest of the remaining ingredients for 20-25 min.
